Scenes from my classes

The last two weeks saw me out in the field teaching lots of Spring classes. I do not teach all that many live classes, so I thought I'd share a few photos...

Dandyfield

Two weeks ago I taught at the Wilderness Awareness Residential Program. Here is what happens when I tr to teach about dandelions on a sunny day. Well, there really is no better way to learn!

Waterleaf

In her left hand is buttercup. In her right is Pacific Waterleaf. Hard to tell with the untrained eye. Young Waterleaf is a Spring edible in the Northwest. Buttercup...well...is not.

Emilynettle

Emilie preps some nettles for our meal. Luckily Kimberly was able to gather some dandelions for fritters in a spot where it was not raining. The dandelions do not open up in the rain.

Cattail

The cattail (left) and nettles (right) are ready for the stir fry!

Shannon cooks it all up for us in the kitchen.

Meal

A 100% wild foods meal! Nettle, cattail, dandelion (leaf and root) stir fry with a chickweed/dandelion leaf/sheep sorrel salad with loads of Spring flowers (like vine maple, salmonberry, huckleberry, oregon grape and more). 11 plants in all. This was from last weekend's class that was open to the public. The week before with the Residential Program, we used over 25 plants in the meal!
