Inspiring Spring Diet

Wow! This is such a busy time of year. I haven't made it to the blog in quite a while, but I have been doing a lot of wonderful stuff with food this spring. It feels to great to be inspired about my diet!

I have been out nettle picking 3 or 4 times already, and have found that nettles last very well tucked in a plastic bag in my vegetable drawer. As a result, I've been adding them to all sorts of dishes. I've made nettle soup (a regular favorite), and nettle lasagne, and have just added them to my stir frys. And we even had a wild food potluck over here and I made nettle spanikopita, just substituting nettle for spinach in the Moosewood cookbook recipe. It was so delicious.

I've also been playing with dandelion. I've made a couple batches of dandelion flower cookies, dandelion flower jam, put dandelion flowers on my salad, and I've got a bunch of the flowers frozen in hopes that John will find the time to make them into dandelion wine!

It feels so great to be integrating these wild plants into our diet on a regular basis. I find it's good for both my body and spirit!

I like to make Dandelion flower oil at this time of year. As well as being a good muscle rub, it is good to gently massage on the Solar Plexus chakra for anyone who needs a bit of upliftment or courage.
